Temporary changes to column visibility are only persisted while the user stays on the table view. To control what fields display by default in the Data tab table, save the desired table configuration to the item using the Save action in ArcGIS Online Map Viewer or the Visualization tab. The table then honors this configuration. Refer to https://www.esri.com/arcgis-blog/products/arcgis-online/data-management/manage-attachments-and-table-configurations for more information.
