Coded values display instead of domain descriptions when viewing the table in ArcGIS Experience Builder.

Workaround

As a workaround, create a new text field in the table from ArcGIS Pro, and calculate its values using the following Arcade expression:

DomainName($feature, 'X')

In this expression, X represents the field name that contains the coded values.
