Since this issue was addressed in ArcGIS Pro 2.8, the best option is to use the Export Features tool or a newer version of ArcGIS Pro where the fix has been implemented.

Workaround

Use ArcGIS Pro version 2.8 or later, and use the Export Features tool to create a new feature class. The new feature class will no longer have the default symbology applied as the tool adds a new feature class on the map. Remove and add the feature class on the map again.
