After publishing a feature layer to ArcGIS Online, the labels for grouped values in a unique values symbology are written into the respective fields instead of the actual unique values.

Workaround

Save the web map in Map Viewer. This action removes the types initially written by ArcGIS Pro from the web map, allowing the field values to display correctly in the pop-up, table, and other areas.
