How much data does the edit cache store in memory on my client machine while editing in ArcMap?

Answer

The edit cache will store all data that is in the current extent of your map from the workspace being edited. The cache is built when you click the Build Edit Cache command in ArcMap.

The documentation states that only those features you have edit privileges to are cached. This is inaccurate. All the features from the workspace being edited, to which you have at least select privileges and that are in the current extent of your map are cached.
